Once every December I find myself shackled to the kitchen, doing a ton of baking... Guess what today was? Limonchello, cranberry sauce and a hefty batch of minced pies were all produced this afternoon, the latter being the most taxing. Every year I think I've cracked the recipe, and while I've certainly improved, I keep falling into the same pitfalls each and every time. Pastry too thick, pastry too thin, not enough flour in the work surface, overworking the dough, overbaking them, overfilling them - there's so many variables. Thankfully this lot came out pretty good, if I wasn't trucking up a mountain in the coastline tomorrow I would have brought them into work, guess I'll just have to have a few 'quality samples' until then.
